This Crunchy Raspberry Raw Slice is delicious and light, perfect for summer. It can be kept in the freezer.
Raspberries are super high in antioxidants, high in fibre, low in sugar and good for the brain. I have added to the preparation a drop of Lemon Essential Oil and a shot of Ningxia Red, the final touch that enhances the raspberries taste and colour, and makes this slice even healthier.

Our Crunchy Raspberry Raw Slice is gluten and dairy free, raw and vegan 
Ingredients
Base
- 1 cup activated buckwheat groats
- 3 Tbsp sunflower seeds
- 40gr raw walnuts
- 1 Tbsp raw cacao powder
- 2 Tbsp cacao nibs
- 2 Tbsp melted coconut oil
- 4 fresh dates, pitted
- a pinch of salt
Cheesecake
- 2 cups of cashew nuts (soaked for at least 5 hours and rinsed)
- 3/4 cup lemon juice
- 1/3 cup coconut or maple syrup
- 1/3 cup coconut oil
Top Layer
- 1,5 cup raspberries frozen and organic
- 2 drops Young Living Lemon essential oil
- 30ml Ningxia Red
Method
Process all the base ingredients until well mixed but still airy.
Prepare a cake pan by either putting a light layer of shredded coconut or baking paper to prevent the crust from sticking to the bottom. Then press the mixture down to form the base.
Place all Cheesecake ingredients in a high speed blender and blend on high until very smooth.
Pour about 2/3 of the mixture out onto the crust and smooth with a spatula. Add the raspberries to the remaining cashew cream, Ningxia Red and Lemon Essential oil. Blend until smooth. Pour onto the top. Place in freezer until solid. Take your Raspberry slice out of the freezer 10 minutes before to serve it and cut it in small squares.
