Nutritious, Colourful and simply delicious!

You can be sure to have a raving success with this cake (gluten free, vegan and raw). It can be kept in the freezer up to 10 days (take it out at least 30 minutes before to serve it)

I have added to the preparation, for their taste and benefits, some of Young Living Culinary Essential Oils. A couple of drops of either Lemon, Lemongrass, Ginger or Tangerine Essential Oils, depending on your mood and taste, will add the final touch and extra powers.

Avocados are packed with nutrients, including 20 different vitamins and minerals, Vitamin K, Folate, Vitamin C, Potassium, Vitamin B5 and B6, Vitamin E.

They also contain some magnesium, manganese, copper, iron, zinc, phosphorous and vitamins A, B1, B2 and B3..

 

 

Ingredients :

Base

  • 1 cups shredded coconut
  • 2 cups raw cashews
  • 1 tbsp coconut oil
  • 1/2 cup medjool dates
  • 1 pinch sea salt
  • 1 drop Tangerine Essential Oil

Filling

  •  1 large avocado (or 2 small )
  • ½ cup melted cup coconut oil
  • 1 ½ cup raw cashew nuts soaked and rinsed
  • ½ cup coconut syrup, maple syrup or yacon
  • 1 tbsp finely grated lime zest
  • 1/4 cup freshly squeezed lime juice
  • 1 or 2 drops lemongrass or tangerine Essential oils
  • 1 pinch sea salt

Method

  • Process all the base ingredients until well mixed but still airy.
  • Prepare a cake pan by either putting a light layer of shredded coconut or baking paper to prevent the crust from sticking to the bottom of the pan. Then press the mixture evenly down into the pan to form the base.
  • To make the filling, put the ingredients into the blender. Mix at high speed until light and creamy.
  • Pour the mixture on top of the base. Use spatula to shape the top.  Freeze for 4 or 5 hours or just chill 1 hour in freezer and transfer to fridge if used during the day and let set a couple more hours or overnight. Decorate with Goji berries and/or thin slices of lime.
