This dairy-free, vegan and raw “cheese” can be used as a dip, a spread on toast or you can even stirred it into a pasta dish! It is easy to make and can be kept in the fridge up to 4 days. For a smooth version, it’s better to use a high-speed blender.

  • 1 cup raw activated cashews (soaked overnight in filtered water and rinsed)
  • 1Tsp Miso paste
  • lemon or orange juice to taste 2 Tbsp
  • sea salt
  • 1 1/2 cup fresh basil
  • 1/2 cup water (or more depending on consistency you wish)
  • 1 garlic clove

If you have a high speed blender like Vitamix, place first all the liquids. Then add cashews and all the other ingredients. Blend until smooth on high-speed for 3 to 4 minutes. You might have to add a bit of filtered water to obtain the consistency you wish.
