Crunchy, Creamy, Full of Flavour and Uplifting Qualities

 

I have been playing in the kitchen trying to combine the best of my favourite slices so far. I must say that I am very excited by the result! My desire was to have a crunchy base, a creamy layer in the middle and a rich dark cacao cover. It worked beyond my expectations!

Using good quality ingredients is fundamental, not only for the results of your preparation but for your health. Organic is a must.

The best natural non processed sweetener is Yacon. You can buy it online. Coconut syrup or mapple syrup are also good options.

For this recipe I have used Young Living Orange essential oil, an oil I use daily for its amazing taste and many qualities from the kitchen to the bedroom (read more below).

Ingredients

For the base

  • 1 cup raw cashews (finely grounded)
  • 1 cup shredded coconut
  • a pinch of fine sea salt
  • 6 to 8 medjool dates (seeds removed)
  • 2 tbsp coconut oil
  • 1/3 cup yacon or coconut syrup (more or less depending taste)
  • 1 drop of Young Living Orange Wellness Essential oil

Centre

  • 1 cup shredded coconut
  • 1 cup raw cashews
  • 3 tbs coconut cream
  • 2 drops of Young Living Orange Essential oil
  • 1 tbs yacon or coconut syrup

For the chocolate cover

  • 1/2 cup Yacon syrup or Coconut syrup
  • a small chunk of Cacao butter
  • 1/3 of a cup of coconut oil
  • 1/2 cup cacao powder
  • 1 drop of Young Living Cinnamon Essential oil

Method

Base

Place all the dry ingredients in blender. Add coconut oil, yacon syrup, salt until well combined and Young Living Essential oil . Press firmly into a square or rectangular cake tin lined with baking paper.

Place in fridge

Centre

Blend (high speed) all the ingredients until smooth. Spread the creamy mixture with a spoon over your base and place in the fridge.

Cacao cover

I usually wait overnight or at least few hours to do the cacao cover. Place the cacao butter and coconut oil in a glass container immerse in hot water until everything has melted. Take off the heat and gently add the cacao, Cinnamon essential oil and chosen sweetener and mix until well combined. Pour the chocolate over your slice.

Allow it to cool down 5 or 10 minutes and place in the fridge for several hours to set.

A word of caution,

With essential oils quality is Essential!  Take caution, not all essential oils are equals! Make sure that the oils you use and wish to ingest are organic, therapeutic grade and listed as dietary supplements. I use and recommend Young Living essential oils (TGA approved).

Be as creative as you want, don’t forget that a drop goes far. In a cup of tea or a glass of water dipping a toothpick in the essential oil bottle and swirling it in your water is often enough.
