A nutritious and delicious vegan dish that should seduce everyone

Buckwheat is not related to wheat and is gluten-free.You will find it into groats, flour, and noodles. The groats, used in much the same way as rice, are the main ingredient in many traditional European and Asian dishes.

Buckwheat has become popular due to its high mineral, protein and antioxidant content. Its benefits may include improved blood sugar control.

Ingredients

  • 1 cup raw buckwheat groats
  • Enough cold water to cover groats
  • 1 teaspoon apple cider vinegar
  • 1 cup green peas blanched
  • 2 cups kale without the stem (spinach or silverbeet will be great too)
  • 1 cup dehydrated porcinis (can be replaced by fresh mushrooms)
  • 2 garlic gloves finely chopped
  • 2 cups organic vegetable stock
  • 1 tablespoon olive oil
  • Basil leaves (10)
  • 2 drops Young Living Basil essential oil
  • 1 drop Young Living Thyme essential oil
  • cracked pepper & salt to taste

Instructions

Place the buckwheat groats in a bowl and cover with cold water and the apple cider vinegar. Leave for at least 3 hours. Rinse the groats thoroughly.

Soften Porcini mushrooms in a cup of hot water for 1h and rinse

In a large pan, heat the olive over medium heat and add the garlic and cook until fragrant. Add the buckwheat groats and stir.

Add the stock and turn the heat to low.

Blend fresh kale until smooth. Add the peas and pulse quickly to keep a bit of texture

Pour the mixture in to the buckwheat pan and stir through, add the porcini mushrooms

Cook for 5 to 10 minutes or until the buckwheat is al dente

Season with your Young Living essential oils, salt and pepper and garnish with the basil leaves.

Serve and enjoy!
