A light and tasty cake is easy to make and will seduce everyone

Do you know that Cashew nuts are actually the kidney-shaped seeds that adhere to the bottom of the cashew apple, the fruit of the cashew tree, which is native to the coastal areas of northeastern Brazil? Cashews have a lower fat content than most other nuts. They are an excellent source of copper and a good source of phosphorus, magnesium, manganese and zinc.

Ingredients – Remember Organic is best

Base 

1 cup activated buckwheat groats
3 Tbsp sunflower seeds
40gr raw walnuts
1 Tbsp raw cacao powder
2 Tbsp cacao nibs
2 Tbsp melted coconut oil
4 fresh dates, pitted
pinch of salt

Earl Grey layer

2 cups activated raw cashew nuts (soaked 4 hours and rinsed)
4 Tbsp melted cacao butter
4 Tbsp yacon or maple syrup
½ cup coconut cream
1 Tbsp Earl Grey lea
pinch of salt

Cacao layer

2 cups activated raw cashew nuts (soaked 4 hours and rinsed)
4 Tbsp melted cacao butter
½ cup coconut cream
4 Tbsp raw cacao powder
4 or 5 Tbsp yacon or maple syrup
1 drop Young Living Cinnamon Essential oil*

Instructions

1/ Place all ingredients for the base in your blender and grind until it looks like sand. Press firmly into a silicon round cake mould (16 cm wide ).

2/In a high speed blender place Earl grey layer until creamy. Layer on crust and place in freezer.

3/ Do the same with cacao layer. Keep the cake in the freezer. Place it in the fridge at least 3 to 4 hours before serving it.
