Fresh, Tasty, Perfect For Your Summer Dinners

Ingredients

  • 2 cups hemp seeds milk (can be replaced by almond milk)
  • 3 or 4 Lebanese cucumbers (depending on size once peeled and cut 5 cups)
  • ½ Lemon
  • ½ cup cashew nuts activated (soaked for a couple of hours and rinsed)
  • 1 Tbsp organic Olive oil
  • 2 or 3 garlic cloves (peeled)
  • 2 drops of Young Living Culinary Lemon Essential Oil** (use peppermint if you serve with a mint leaf)
  • Fresh coriander to garnish (can be replaced by dill or mint)
  • 1 Tbsp Hemp seeds
  • Paprika
  • A pinch of sea salt
  • Cracked pepper to taste

Instructions

  • Peel the cucumber, cut them in half and de-seed them. Sprinkle with sea salt and Put them in a colander to release water for at least 1/2 hour.
  • Put them in a high-speed blender and add all the ingredients a part Hemps seeds and fresh coriander.
  • Blend and put in the fridge.
  • Once it is cold, serve in individual bowls or cups, adding a sprig of coriander and sprinkle with paprika and fresh coriander.

Can be kept in the fridge for 3 or 4 days.
