A Burst of Summer in your Mouth
Everyone loves mangoes and the mango season is one of the summer symbol in Australia.
This Frozen Mango Slice is easy to make with the right ingredients and is stored in the freezer. The addition of a few drops of Young Living Basil essential oil enhances the taste of mango and makes it irresistible.
Mangoes are so much more than just delicious. They offer impressive health benefits. Just 1 cup (165 grams) of fresh mango provides 67% of the DV for vitamin C so important for our immune system and help cell repair and iron absorption.
Mango is rich in Beta-carotene, a pigment responsible for the yellow-orange colour of the fruit. Beta-carotene is an antioxidant that has been shown to fight free radicals, which can cause damage to our cells and potentially lead to cancer.
Mangoes are also helpful for supporting your cardiovascular system. They are a great source of Magnesium and Potassium
Despite its sweet taste fresh mangoes are low in calories (around 100 calories for 150 grams). Mango helps support digestive function thanks to its content of digestive enzymes called amylases and high content of fibre.
Frozen Mango Slice Ingredients
The slice is gluten and dairy free, raw and vegan
Base
- 1 cup activated buckwheat groats
- 3 Tbsp sunflower seeds
- 40gr raw walnuts
- 1 Tbsp raw cacao powder
- 2 Tbsp cacao nibs
- 2 Tbsp melted coconut oil
- 4 fresh dates, pitted
- a pinch of salt
Middle Layer
- 2 cups of cashew nuts (soaked for at least 5 hours and rinsed)
- 3/4 cup lemon juice
- 1/3 cup coconut or maple syrup
- 1/3 cup coconut oil
Top Layer
- 1,5 cup mango fresh or frozen (organic if possible)


- 2 drops Young Living Basil essential oil
- 1/2 cup lemon juice
How to Prepare Your Mango Frozen Slice
1/Process all the base ingredients until well mixed but still airy.
Prepare a cake pan by either putting a light layer of shredded coconut or baking paper to prevent the crust from sticking to the bottom. Then press the mixture down to form the base.
2/Place all middle layer ingredients in a high speed blender and blend on high until very smooth. Pour about 2/3 of the mixture out onto the crust and smooth with a spatula.
3/Add the sliced mangoes to the remaining cashew cream, Lemon juice and Basil Essential oil.
Blend until smooth. Pour onto the top. Place in freezer until solid.
4/ Once frozen cut it in small (or big!) squares and store in freezer in a container. You’ll have a delicious frozen slice to offer to your guests and to indulge yourself when you feel like it.
