You can choose to make these Crunchy Mini Chocolate Tarts a slice and cut it into squares, or like me make individual mini tarts. I used a Bakemaster Silicone Mini Muffin Pan 24 Cup from Kitchen Warehouse You can also replace cacao in the base by Matcha powder.
- For the base 1 cup cashews, 1 1/2 cups organic almond meal, ½ cup shredded coconut, 3 tbsp coconut oil, 2 tbsp Raw cacao, a pinch of fine sea salt, 1/2 cup activated buckwheat, 1/3 cup maple syrup (adjust depending your taste), 2 drops Young Living Tangerine or Lavender Culinary Essential oil.
Tangerine essential oil is one of the sweetest flavours of all Young Living’s citrus culinary oils. Bringing complex citrus notes to savoury dishes and desserts, Tangerine essential oil is a bright, tangy addition to many recipes and is also great as an uplifting perfume. lavender with cacao is delicious and sophisticated.
- For the chocolate cover
1/3 cup maple or yacon syrup
1/3 cup coconut oil + a nice chunk of cacao butter
1/2 cup raw cacao powder
Instructions
Base
1. Place cashews, almonds, coconut in your blender and grind until it looks like sand.
2. Add coconut oil, maple syrup, salt and cacao powder process until well combined.
3. Add 2 drops Tangerine Young Living Essential oil and 1/3 cup of activated buckwheat and process quickly. Other essentail oils you could use Orange, Lavender (I love it!) or Cinnamon.
4. Press firmly into a square or rectangular cake tin lined with baking paper.
5. Place in fridge

Melt slowly cacao butter and coconut oil. Add the cacao powder and mapple syrup and mix until smooth and well combined. Pour the chocolate over your slice and use the back of a spoon to spread it to the edges.
Place in the fridge to set. They keep well 5 or 6 days in the fridge and can be frozen.
